How the weeks fly by… Today, a toast to time, forgetting, and the utterly bearable lightness of GNE‘s Absinthe Fairy.

Mock Absinthe

2 oz. rye whiskey
1/2 oz. Pernod (anise liquor)
1 t. granulated sugar (or 1 cube)
3 – 4 dashes bitters
twist of lemon peel

In a rocks glass, crush together sugar, bitters, Pernod. Add ice and whiskey, stir and add garnish.
